“Boxty on the griddle, boxty in the pan, if you can’t make boxty, you’ll never get your man”.

How to prepare one of the most traditional Irish dishes that originated during the great famine.

 

While the historian recounts the events of the tragedy and the resultant Irish exodus to other shores, the chef gives instruction on the technique of mixing potatoes and grains. After making the boxty and waiting for it to be baked, the chef then prepares an onion stew.

The result is an entirely vegetarian dish, replete with its ancient flavour, one that combines poverty with the will and pride of the Irish people.
